Minty Lime Refresher

                Since I had some mint left after making watermelon popsicles last week (you can get the recipe here), I decided to make my go-to summer drink.  This lime and mint refresher is perfect for those hot summer days, so I wanted to share it with you.  Basically, it's a virgin mojito with a lemony kick to it!  So delicious! 

Here are the ingredients (Serves 1):


1.) The juice of 1 or 2 limes


2.) The juice of 1/2 lemon

3.) 10 mint leaves

4.) 1/8 cup sugar (1 oz.)

5.) 1/8 cup water (1 oz.)

6.) Sparkling water

7.) Ice cubes


Directions:

1.) Squeeze the lime and lemon into a desired glass

2.) Tear 8 mint leaves with your fingers and add place them on the bottom of the glass  

3.) Crush the leaves with a spoon to marry the minty oils with the lime and lemon juice

4.) Pour in the sugar, water, and 2 mint leaves into a pot and place on the stove at medium to medium high heat to make the simple syrup

5.) After the sugar has melted, remove the mint leaves and set the simple syrup aside to cool

6.) Pour the cooled mint infused simple syrup into the glass and add ice

7.) Fill the rest of the glass with sparkling water
